This festive rocky road is the perfect guilt free treat to nibble on, best stored in the fridge, it keeps well and is a great addition to Christmas platters, gifts and dessert boards.
1 cup of almonds or hazelnuts (chopped roughly)
1/2 cup puffed amaranth or puffed rice (I used amaranth)
1/4 cup goji berries
1/4 cup tart cherries
1/2 cup Chantal organics coconut flakes
1/4 cup cacao nibs
1/2 cup Chantal organics coconut oil
3TChantal organics almond butter
1/4 cup Chantal organics apple syrup
1/2 cup Chantal cacao powder
1t Chantal organics maca powder
1t vanilla extract
1t bee pollen
Line a slice tray or container with baking paper, making sure there is overhang for easy removal afterwards.
Combine almonds, amaranth, goji, coconut and cacao nibs into a medium bowl.
Melt coconut oil over a low heat in a small saucepan. Add almond butter, syrup, cacao powder, mama, vanilla and pollen, string well until it’s all mixed in.
Combine with dry ingredients and spread evenly into the tray.
Freeze for a minimum of 2 hours before cutting into even pieces. Store in fridge afterwards.
